Top chefs draw culinary arc between North and South Tyrol

Peter Girtler was born in Vipiteno in 1972. He began his training at a restaurant in Trens, then worked at the Stafler, the Steigenberger Hotel Alpenkönig in Seefeld, with 3-Michelin-starred chef Heinz Winkler in Aschau, at the Vital Hotel Royal in Seefeld, at the Hotel Castel Dorf Tirol with Gerhard Wieser and at the Parkhotel Laurin in Bolzano. His style of cuisine now delights guests at the Gourmetstube Einhorn in the Hotel Stafler in Freienfeld. The famous Gault&Millau restaurant guide says of Girtler: ‘Among creative cooks, Girtler is the most capable advocate of holistic cuisine.’
Back in 2009 and at the tender age of 33, Simon Taxacher earned a second Michelin star for his Rosengarten restaurant – the first and only restaurant in Tyrol ever to achieve this rating before the Guide Rouge ceased publication in Austria. In December 2010, Simon Taxacher and his partner Sandra Kobald opened the Hotel Rosengarten which houses the Restaurant Simon Taxacher (4 Gault&Millau toques/19 points) and the Bistro-Restaurant Rosengarten (2 Gault&Millau toques/15 points), thus bringing to fruition his vision of perfect hospitality. Uniquely in Austria, the Hotel Rosengarten combines 6 Gault&Millau toques under its 5-star roof.
